A variety of fad diets have created a huge amount of confusion about potatoes and weight loss. The result is that a lot of people simply eliminate carbohydrates when they're on a diet. But is that healthy? Dr. Katherine Beals, Associate Professor of Nutrition at the University of Utah and Nutrition Consultant to the United States Potato Board addresses this question with new research which shows that potatoes can in fact be part of a weight loss regimen. Dr. Beals is considered an expert in carbohydrate metabolism, and oversaw this major study that was presented at the 28th Annual Obesity Society Scientific Meeting.
